Why Is Ca Phin’s coffee dark? An AMA about our Vietnamese coffee roasts
“Why do you roast your coffee so dark?”
We get asked this a lot. And honestly? Because we like it that way :D But there's a little more to it.
Do you believe dark roast is better?
Nope. We don't believe coffee should be light, medium or dark just because that's what coffee is “supposed” to be. Every bean is different. So we roast, taste, adjust, roast again, and keep going until we find a profile that brings out what we love about that particular coffee.
Sometimes that's light. Sometimes it's medium. And yes, quite often, it's dark.

So why do you like it dark?
Because our coffees can handle it. Our Fine Robusta has plenty of body, sweetness and character to work with. A deeper roast can bring out the bold chocolate, caramelised sweetness and heavier body we love — especially when brewed through a phin.
And when that coffee meets ice, condensed milk or milk? That's when things get really fun.
Can Vietnamese coffee be light roasted?
Absolutely. Vietnamese coffee isn't automatically dark because it's Vietnamese. Our beans can be roasted lighter, just like coffee from Ethiopia, Colombia or anywhere else. In fact, lighter roasting can highlight more acidity, fruit and origin character.
We've tried it. We still come back to darker profiles for some of our coffees because we simply prefer what they taste like that way. It's not a rule. It's a choice.
But isn't dark roast just “burnt” coffee?
Only if you roast it badly. A dark roast shouldn't taste like an ashtray.
Good roasting is about finding the point where the bean's sweetness, body, acidity and roast character come together. Push it too far and you lose the coffee. Stop too early and you might not get the character you're looking for.
The goal isn't to roast the bean dark. The goal is to roast it right.
What makes Ca Phin different?
We start with the bean. Our Fine Robusta and Single-Origin Arabica are sourced directly from Vietnamese farmers, then roasted locally in the UAE. We taste our coffees constantly and develop roast profiles around the character of each coffee — rather than forcing every bean into the same roast style.
